the dregs game-changing chicken stock

the dregs game-changing chicken stock 

ingredients:

3 lbs chicken bones, (ask your butcher for necks and backs)

extra virgin olive oil

kosher & sea salt

4 or 5 cloves garlic, smashed

2 carrots, peeled and roughly chopped

2 celery and 2 yellow onions, roughly chopped

bonus points, 1 leek roughly chopped

a handful of whole black peppercorns, fresh thyme, bay leaf

strainer & cheese cloth 

step 1:

heat your oven to 375º. rinse and pat dry your bones. throw them in a roasting pan and toss em liberally with olive oil and kosher salt. throw them in the oven for about 30-40 minutes, until your house is starting to smell like thanksgiving. 

step 2:

while the bones are roasting away, prep, peel, rinse and chop all your veg. toss everything in a stock pot. once the bones are ready to rock, toss them and the drippings into the pot on top of everything else. fill to the top with filtered water. high heat until it simmers (never, ever let it boil), then low heat for 3-5 hours depending on how much time you have. 

step 3:

strain it. once through just mesh, and then once more through cheese cloth. toss it back in the pot, add sea salt to taste. 

done. freeze what you don’t need. use in & on everything.

Gascony is a wine growing region in the southwest of France. It has a mild climate with warm summers and short winters. It is here that Ugni Blanc, Folle Blanche and Colombard grapes are used to produce Armagnac. It is also the home of the Madiran Appellation d’Origine Contrôlée. These wines are required to be made up of 40-60% of the Tannat grape and are usually supplemented by Cabernet Franc, Cabernet Sauvignon and Fer.
The dry white wines of the southern area of this region are known as Pacherenc du Vic-Bilh. The primary grape varieties of Courbu and Petit Manseng must together make up between 60-80% of the wine. Blending grapes Arrufiac, Gros Manseng and Sauvignon Blanc are permited, with Sauvignon Blanc being limited to 10%.
